Recipe:
1 cup blueberries, sprinkle with flour and set aside.
1 cup and 1/4 flour
1 teaspoon cinnamon
1 teaspoon vanilla powder
2 tablespoons lemon juice.
1/2 cup plant-based milk with 2 teaspoons of apple cider vinegar Leave aside.
2 very ripe bananas. They should be very soft.
1 cup coconut sugar
1/2 cup melted coconut oil
1 teaspoon of baking soda
2 teaspoons baking powder.
Method:
1. Preheat oven to 350F.
2. Grease a bread pan.
3. Mix dry ingredients well.
4. Mix wet ingredients together.
5. Add wet to dry and mix well.
6. Add blueberries.
7. Bake for 1 hour or until the heart is tender.
Blueberry glaze:
Boil one cup of blueberries until tender. Strain through a sieve to make 1/2 cup liquid.
Take one or two cans of chilled coconut milk from the refrigerator. Scoop out the cream. Mix with 1/2 cup icing sugar and pour over with blueberry liquid. Whisk for 4 minutes until fluffy. Add to your cake
To ensure the top layer cooks evenly and does not brown, place a very loose aluminum foil cover on the baking sheet while baking. delete it for the last ten minutes.
